Recipe: Egg in an Avocado

Some people believe breakfast can be boring! I disagree, there are endless possibilities when it comes to breakfast; personally it’s my favorite meal. I write a blog called Bravo For Paleo and my readers are always looking for creative, yummy, and simple recipes. Some people understand what they should and shouldn’t eat but have a hard time actually preparing healthy foods.

When I got to college, there were two options – eat crap and waste money, or plan meals, cook, and eat healthy. I went with the healthy option and ate a Paleo diet for the past year and a half. I love to try new recipes, especially ones that are quick and delicious, with few ingredients. My readers went ga-ga when I shared this Egg in an Avocado recipe. It’s such a simple idea, and I promise you won’t find breakfast boring anymore.

Here’s how easy it is:

You’ll need

  • An avocado
  • 2 Eggs
  • Sea salt & pepper
  • Seasoning, optional

Directions
Cut avocado in half, remove pit. If necessary, scoop out some avocado to make room for egg filling. Crack eggs into a bowl. With a spoon, place yolk and some egg white into each avocado hole. Bake in oven at 425° for 13-15 minutes. Season and enjoy!
