Just listened to the podcast with Ameer. Very enlightening. Been looking into this potato thing and no one says how to eat them once you have cooled them off. Do you reheat? I have read that if you bring them higher than 130* you destroy the resistant starch. So cold potato salad? Always?
This is true, if you heat the potato again above 130 or 140 it will destroy the resistant starch. Here’s all the info you could ever want on resistant starch. http://freetheanimal.com/2013/12/resistant-primer-newbies.html
